· · 2 Tbsp Achote Seeds (or liquid achote in bottle)
· · 1/2 Tsp Salt
· · Black Pepper
· · 2 Tbsp Salad Oil (or chopped bacon)
· · 1/2 Cup Chopped Onions (optional)
· · 2 Cups Water
· · 2 Cups Rice
Soak Achote seeds in 1/2 cup warm water for 30 minutes.
Add salt. Rub or press Achote seeds to get color.
Strain liquid into small bowl.
Rinse the rice and drain. Put rice in rice cooker.
Add achote water (equivalent to 2 cups),
salad oil, salt, black pepper, and onions.
When using bottled achote, add achote to two cups of water
to get to desired color. Do not put a lot.
Achote tends to get bitter when a lot is used.
